I am so incredibly blessed; PepsiCo reached out to me to make content for them promoting Starry. Of course, in true SavFromScratch fashion, I had to bake a cookie inspired by the soda. This was such an exciting opportunity and I am so grateful they decided to take a chance on me. This is just the beginning. I am so happy I was able to execute such a cool cookie for them and would not change a thing. These lemon sugar cookies inspired by Starry are so good and I put my entire heart into them to give them the best content I possibly could. Why measure with your heart?

You may see in my recipes that I do not provide a measurement for vanilla and occasionally for other ingredients. I like to allow you as much creative freedom as possible without destroying the recipe. I trust your instincts. Now obviously don’t go and pour the entire bottle of vanilla in your batter, but it’s not one of those ingredients you have to be super meticulous with. If I don’t measure it why should you?

For a pinch of salt I pour the salt in my hand and use my pointer finger and thumb to pinch, then add it to my bowl.

All of my recipes are written as I do them.

From a young age, my mom used to always get on me for not following recipes to a T, but as I got older I realized that the creative freedom I gave myself fueled my love for baking. In the kitchen I allow my mind to wander and test the limits of each recipe. Sometimes resulting in disaster but more often than not resulting in a delicious outcome.

NOTE: when I say measure with your heart I NEVER mean the leavening agents or base ingredients such as flour, sugars, and butter. Not measuring these ingredients accurately will change the overall outcome of your cookie!


One Bowl for wet and dry ingredients ???

I know! Crazy right?! In recipes, to minimize the number of dishes I have to do at the end of the night I tend to do everything in one bowl. Recipes usually tell you to mix dry and wet ingredients separately so you don’t accidentally overmix your batter. Feel free to combine the dry ingredients separately if your heart truly desires. Just make sure dry ingredients are fully incorporated before continuing to the next step. If you are nervous about overmixing you can also use a spatula to fold the dry ingredients into the wet; that generally helps me.

Prep Time: 10 mins | Chill time: 1 hr | Bake time: 12 mins

Ingredients:

  • 1 cup butter

  • 2 1/2 cups flour

  • 2/3 cups sugar

  • pinch salt

  • 1 tsp baking powder

  • 1 tsp lemon extract

  • splash vanilla extract

  • 2 eggs

Instructions:

  1. Start by creaming together your butter and sugar for about 3 minutes in a large bowl on medium speed

  2. Add your eggs, vanilla, and lemon extract (s) to the bowl & mix until combined

  3. Add your dry ingredients and mix until a cohesive dough is formed

    • If you feel that your dough is too sticky add in 1/4 cup more flour; be mindful of the dough consistency. it should be firm, but not crumbly or too dry

  4. separate your dough into two equal bowls

  5. Using any green or yellow food coloring of your choice dye one portion of the dough yellow and the other portion of the dough green

    • I added a little bit of yellow to my green to make the dough more of a lime green instead of a forest green, but you can color your dough at your discretion.

      optional: add a tsp more lemon extract to the yellow portion

  6. Remove the dough from your bowls and wrap each color in cling wrap

  7. Chill dough for 1 hour

    • Chilling is extremely important to make sure the dough keeps its shape and doesn’t melt in the oven. do NOT skimp on chill time !!!

  8. Preheat your oven to 350°

  9. once chilled; on a heavily floured surface stack the dough on top of each other and roll out using a rolling pin (or starry can 😉) until a tye dye pattern is made

  10. Using a star cookie cutter cut out stars in your dough and add each star to a prepared baking sheet (a baking tray lined with parchment paper)

  11. Bake at 350° for 12 mins

  12. Once removed from the oven allow to cool on your baking sheet for a few minutes then add to a baking rack to cool completely before eating.
