Lazy Peach Cobbler
I made lazy blueberry cobbler a few months ago and now I think it’s time for peach. This recipe is so low effort and takes absolutely no time at all.. Picture juicy peach slices bubbling beneath a buttery, golden crust, all achieved with minimal effort. This recipe requires just a handful of pantry staples and a few easy steps, perfect for those lazy afternoons when you crave something delicious without having to do too much. Serve it on a nice summer evening, warm, topped with a scoop of vanilla ice cream.
Why measure with your heart?
You may see in my recipes that I do not provide a measurement for vanilla and occasionally for other ingredients. I like to allow you as much creative freedom as possible without destroying the recipe. I trust your instincts. Now obviously don’t go and pour an entire bottle of vanilla in your batter, but you do not have to be super meticulous with it. If I don’t measure it why should you?
For a pinch of salt I pour the salt in my hand and use my pointer finger and thumb to pinch, then add it to my bowl.

From a young age, my mom used to always get on me for not following recipes to a T, but as I got older I realized that the creative freedom I gave myself fueled my love and passion for baking. In the kitchen I allow my mind to wander and test the limits of each recipe. Sometimes resulting in disaster but more often than not resulting in a delicious outcome.
Ingredients:
4-5 peaches sliced
If you’re someone who prefers more peach than cobbler use 4; if you’re someone who prefers more cobbler than peach use 3!
1/3 cup brown sugar
1 1/2 sticks of butter
2/3 cups milk
1/2 cup granulated sugar
1 cup flour
1 1/2 tsp baking powder
pinch salt
1/2 tbsp cinnamon
(optional pinch nutmeg)
Instructions:
Preheat your oven to 375°
Start by slicing your peaches into even slices
Add 1 tbsp butter to a medium sauce pan on medium heat
Once your butter is melted add your peaches, brown sugar, cinnamon, and lemon juice: mix and simmer on medium to low heat for about 5 minutes
Remove your peach filling from the heat and mix together your flour, salt, sugar, baking powder, and milk in a bowl until the batter is formed
Add about 10 thin slices of butter to a 8x8 pyrex dish.
Pour on your peach filling, and then top with the batter and spread
(Optional) Add about 5 more slices of butter to top your cobbler off to ensure it gets nice and brown
Bake in the oven for about 25-35 minutes or until golden brown
Cool then top with vanilla ice cream and enjoy !
